asian turkey meatballs

 

Another home run… the sauce is EVERYTHING.

Serve with rice or quinoa – perfection – and a side of broccoli or asparagus (just to name a few).

Meatball Ingredients:

  • 1 lb ground turkey
  • 3 green onions (scallions), fine chop
  • 2 cloves garlic, grated
  • 1/2 cup panko bread crumbs
  • 1 egg
  • 1.5 tsp sesame oil
  • pinch of ground ginger
  • 1/2 tsp salt
  • 1/4 tsp ground pepper

Sauce Ingredients:

  • 3 tbs sweet chili sauce
  • 2.5 tbs low sodium soy sauce
  • 1.5 tsp brown rice vinegar
  • 2 tsp sesame oil
  • 1 tbs ketchup
  • 1.5 tbs brown sugar
  • 1 tsp tapioca flour

Directions:

In a large bowl, combine the meatball ingredients with your hands until all are fully incorporated.  If mixture is hard to handle, lightly coat your hands with some sesame oil. Form your meatballs and place on wax paper.  Heat a large skillet on medium high.  Lightly coat with sesame oil.  Add meatballs to the pan and lower heat to medium, medium low.  Cook about 4 minutes per side.  Remove meatballs from pan once cooked.  Rinse pan with warm water and wipe dry.  Place pan back on medium low heat and warm up the sauce ingredients, stirring constantly, until thickens.  Add the meatballs back in and toss to coat.

Yields 4 servings.

Notes:

  1. For the sauce ingredients..you can use corn starch or arrowroot powder in place of the tapioca.
